Prepare to be amazed by Su Böreği! This traditional Turkish masterpiece isn't your average pastry. 😲 It features incredibly soft, thin dough sheets, briefly boiled before being layered with creamy cheese and rich butter. The result is a uniquely tender, almost melt-in-your-mouth texture that is simply unforgettable. While a labor of love, every single layer is worth the effort! ✨😋
Ingredients:
For the Dough:
5 large eggs
1/2 cup water
1 teaspoon salt
3.5 to 4 cups all-purpose flour (as needed)
For the Boiling Process:
A large pot of water + 1 tablespoon salt
A large bowl of cold water + 1 tablespoon olive oil
For the Filling & Layering:
1 cup (226g) butter, melted
2 cups crumbled Turkish white cheese (like feta or Beyaz peynir)
1/2 cup finely chopped fresh parsley
For the Top:
1 egg yolk (for brushing)
1 tablespoon milk
Instructions:
Dough & Prep: Make the dough by mixing eggs, water, salt, and slowly adding flour until smooth. Knead well (10 mins). Rest for 30 mins. Divide into 10-12 balls. Roll each paper-thin. 🥚💧🌾
Boil & Cool: Set up your boiling/cooling stations. Boil each sheet for exactly 1 minute, then immediately shock in the cold oil-water bath. Drain carefully. ⏱️🧊🛁
Layer: Grease your baking dish with melted butter. Lay down the unboiled sheet. Layer half the boiled sheets, brushing each generously with melted butter. Spread the cheese/parsley filling. Layer the remaining boiled sheets, buttering each. Finish with a unboiled top sheet. 🧀🌿🧈Layers upon layers!
Finish: Brush the top with egg yolk/milk mixture. Bake at 375°F (190°C) for 30-40 mins until deeply golden and crispy on top. 🍳🔥
Serve: Let cool slightly before cutting into squares. Enjoy the soft, cheesy perfection! ✂️😋
