Elevate your side dish game with this classic Turkish comfort food. Fragrant rice is infused with the rich flavor of ripe tomatoes and a hint of mint. It’s incredibly easy to make and the perfect companion to grilled meats, stews, or simply enjoyed on its own.
Ingredients:
1 cup long-grain rice (preferably Basmati or Jasmine)
2 large, ripe tomatoes, finely chopped (or 1 cup canned crushed tomatoes)
1 small onion, finely diced
2 tablespoons butter
1 tablespoon olive oil
2 cups hot water or chicken/vegetable broth
1 teaspoon salt (adjust to taste)
1/2 teaspoon black pepper
1 teaspoon dried mint
Fresh parsley, for garnish
Instructions:
Rinse the rice under cold water until the water runs clear. Drain well.
In a medium saucepan, heat the butter and olive oil over medium heat. Sauté the diced onion until translucent and lightly golden.
Add the chopped tomatoes, salt, pepper, and dried mint. Cook for about 5 minutes, until the tomatoes soften and release their juices.
Stir in the drained rice and cook for 1-2 minutes, coating the grains with the tomato mixture.
Pour in the hot water or broth. Bring to a boil, then reduce the heat to the lowest setting. Cover the pot tightly with a lid.
Simmer for 15-20 minutes, or until the liquid is fully absorbed and the rice is tender. Do not stir while cooking.
Remove the pot from the heat. Place a clean kitchen towel or paper towel over the pot, replace the lid, and let it rest for 10-15 minutes. This allows the pilaf to steam and fluff up.
Fluff the pilaf gently with a fork and serve hot, garnished with fresh parsley.
