Prepare for a flavor explosion! 💥 Çiğ Börek, a beloved Turkish classic, features perfectly seasoned raw ground meat encased in thin dough and deep-fried to a golden, puffed-up crisp. 😋 While the name "raw" can be intimidating, the magic happens in the hot oil, cooking the filling and creating a dangerously delicious contrast of textures. Warning: these are highly addictive! 🧡✈️
Ingredients:
For the Dough:
3 cups all-purpose flour
1 cup warm water (adjust as needed)
1 teaspoon salt
Vegetable oil (for frying)
For the Filling:
1 lb (450g) lean ground beef (preferably finely ground)
1 large onion, grated and juices squeezed out
2 tablespoons water (for moisture)
1 teaspoon salt
1/2 teaspoon black pepper
A pinch of red pepper flakes (optional)
Instructions:
Dough & Prep: Combine flour, water, and salt. Knead into a smooth, slightly stiff dough. Cover and rest for 30 minutes. 🌾💧
Make Filling: Thoroughly mix the ground beef, grated onion, water, and spices. Ensure everything is well incorporated. This "raw" mixture is the secret! 🧅🥩🥄
Assemble: Divide the dough into small balls. Roll each very thin (like a tortilla). Place a generous tablespoon of filling on one half, spreading slightly. Fold the other half over. 🥟 Fold and crimp the edges tightly to seal.
Deep-Fry: Heat plenty of oil in a deep pan. When very hot, carefully slide a few böreks in. Fry for 1-2 minutes per side until they puff up beautifully and turn a deep golden brown. 💥🔥
Serve: Drain briefly on paper towels and serve immediately while hot and crispy! 😋
