Ingredients:
1 cup red lentils
1.5 cups fine bulgur
1 onion
2 tbsp tomato paste
1/2 cup olive oil
1 bunch scallions & 1 bunch parsley
1 lemon, 1 tsp cumin, salt, red pepper flakes.
Instructions:
Boil lentils in 3 cups of water until they are very soft.
Add bulgur, stir, cover the pot and let it sit for 20 minutes to absorb water.
Sauté chopped onions in olive oil with tomato paste until soft.
Add the onion mixture and spices to the lentils and bulgur.
Once cooled, add finely chopped scallions and parsley.
